聖誕節過後,買了一個muffin烤盤和打蛋器當做聖誕禮物。
興致勃勃地做了下面這款muffin,滿好吃喔:)

COFFEE WALNUT CHOCOLATE CHIP MUFFINS | |
1/2 c. unsalted butter, softened
1/2 c. brown sugar 1/2 c. white sugar 3 tbsp. instant coffee 2 tsp. vanilla extract 2 eggs 2/3 c. milk 1 3/4 c. flour 1/2 tsp. salt 1 tbsp. baking powder 3/4 c. chocolate chips 1 1/2 c. walnuts, coarsely chopped
Preheat oven to 350 degrees. Grease and flour twelve 3-inch muffin pan cups. Cream the butter with the sugars, coffee, and vanilla. Beat together the eggs and milk.
Combine the flour, salt, and baking powder. Alternately add the wet and dry ingredients to the butter mixture. Stir just to combine. Add the chips and walnuts. Fill the tins 1/2 full. Bake 20 minutes. Cool 5 minutes and remove from tins. You may need additional muffin tins. |
跟scone一樣,奶油都要弄得碎碎小小的,然後不可以攪拌太久,這樣比較會成功:)
