因為Alan愛上了cream cheeze muffins鬆軟的口感,家裡的水果又只剩下蘋果,所以特地找了這一款食譜。做了之後,覺得是有史以來最成功的一次。不曉得是不是因為加了一點點蘇打粉,所以發起來形狀特別漂亮。特別留下紀念:)
Cream Cheese Apple Muffins

INGREDIENTS
- 1 (3 ounce) package cream cheese, softened
- 3/4 cup sugar
- 2 eggs
- 1/2 cup milk
- 1/4 cup butter or margarine, melted
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 1/2 cups all-purpose flour
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 cup peeled, diced tart apples
- 1/2 cup bran flakes cereal
- TOPPING:
- 1 1/2 teaspoons sugar
- 1 teaspoon ground cinnamon
DIRECTIONS
- In a mixing bowl, combine the cream cheese, sugar, eggs, milk, butter, lemon juice and vanilla; beat until smooth. Combine the flour, baking powder, baking soda and salt; stir into cream cheese mixture just until moistened. Fold in apples and bran flakes.
- Fill greased or paper-lined muffin cups two-thirds full. Combine topping ingredients; sprinkle over batter. Bake at 375 degrees F for 20-25 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack.

上面灑的肉桂糖粉有畫龍點睛的效果,非常出色。原本食譜是說烤之前就灑上去,可是我那時候忘記了,等到考出來才灑。雖然不容易沾上去,卻也非常好吃喔!
食譜說要用酸的蘋果,可是我們家只買最甜的富士蘋果,我自己減少了糖量,不過還是少了點酸酸甜甜的口感。當時沒有檸檬汁,所以就用蘋果醋代替,效果OKAY 奶油我也沒有先融化,而是採用跟cream cheese一樣弄成小塊的方法,這是我個人的偏好

我和alan都快想不出新口味的muffin了!
差不多是該嘗試點心東西的時候了...
其實有一個不得已的理由:我的餅乾到現在還是失敗。
上禮拜二,又丟掉一大包失敗的餅乾。餅乾真是難呀
